Adapted from a crock pot recipe with Chef John, this party favorite cooks up deliciously with amazing speed. As a bonus—bring the attractive clay pot to the party to serve from! A mixture of healthful spinach combined with cheeses is not only great for dip well as a snack on whole grain breads at any time of the day. 16 to 20 ounces frozen chopped spinach, thawed and squeezed dry 2 (8 ounces) packages mild goat cheese, cut up 1 cup shredded cheddar cheese 1 cup shredded Monterey jack 3/4 cup chopped green onions (also called scallions) 2 cloves of garlic, minced 1 shallot, finely chopped 1 teaspoon Hungarian paprika Freshly ground pepper and salt to taste 1. Add all ingredients except 1/4 cup shredded cheese, in VitaClay pot; 2. Cover and set on Slow Cooking-Stew for 30 minutes, stirring once 3. Garnish with 1/4 cup of shredded cheese for topping. 4.
