Healthy Crockpot Roast
This recipe for cooking roast in a crockpot is easy, simple and healthy. Leave the skins on the vegetables to retain the vitamins. Research indicates that in most vegetables the nutrients are just right under the skin. There are no mixes or packets of gravy in this recipe, which contain toxic MSG and excess salt. This recipe does call for a can of mushroom soup, but you can get a low-salt variety or make your own to pour over the roast.
Here's what you need:
3-5 lb roast
5-6 carrots, cut in chunks
4-5 potatoes, cut in chunks
1 large onion, sliced
1 package mushrooms, sliced
1 can mushroom soup
Worcestershire sauce
1 cup water
In the bottom of the crockpot, layer the cut up carrots, potatoes, onion and half of the mushrooms. Place the roast over the top of the vegetables. Sprinkle the Worcestershire sauce all over the roast.
Mix the can of mushroom soup with 1 cup of water and pour over the roast. Top with remaining mushrooms. Set the crockpot on low for about 8 hours, or until the meat falls apart. Serve with brown rice or quinoa.
If you have leftovers the next day, put it in a pot and add the following ingredients to make a good stew or soup: tomatoes, corn, celery, pinto beans, greens, seaweed, lima beans, peeled sweet potato chunks, parsnips or any of your other favorite vegetables. The seaweed and greens are delicious in a soup and they add loads of magnesium and natural iodine into your diet.

Slow Cooker Soups - Seafood Chowder For the Crock Pot
A slow cooker or crock pot is a great way of making meals and soups whilst you get on with other things.
It is a fantastic tool in the kitchen for the busy lifestyle that many people lead these days.
There is often time in the day to prepare food, but standing over a hot stove, stirring soup is not a productive use of your time.
This is where the slow cooker comes into its own.
You simply prepare the ingredients, put them into the crock pot and walk away. You can get on with other things, leaving the slow cooker to do its job.
Fish cooks quickly so you don't need as long as meat dishes.
You can use any mixture of fish you like in this recipe - smoked or plain - oily fish is not suitable though, so don't use salmon, mackerel or similar.
You need to soften the potatoes and onion - if you were cooking a meat dish, then it would take longer, but with a seafood soup, the cooking time is shorter, so the vegetables need to be cooked a little.
This quantity will serve four people. Most crock pots will be big enough for this amount of liquid.
Try to resist the urge to lift the lid during the cooking time as it will affect the timings because it lowers the temperature.
You're working on very low temperatures here, so lifting the lid could add 30 minutes or so to the cooking time.
Seafood Chowder
1 lb (450g) fish fillets
4 oz (125g) bacon - diced
1 onion - peeled and diced
1 lb (450g) potatoes - peeled and diced
1 pint (600 ml) milk
1 pint (600 ml) water
1 bay leaf
1 tbspn worcester sauce
Heat the slow cooker to Low while you're preparing the ingredients.
Fry the bacon bits in a pan until the fat runs - then add the potato and fry for 5 mins or so until it begins to soften. Add the onions and fry a further 5 mins - add a little oil if the mixture dries out.
Transfer these to the crock pot.
Cut the fish into chunks, add it to the pot with the rest of the ingredients.
Cook on low for about 5 hours.
If you like a thicker chowder, then you can use arrowroot or cornflour to thicken - just stir in about 4 hours into the cooking time and leave the chowder for a futher 30 minutes or so.
Serve with crusty bread for a lovely hearty seafood chowder.

Taste tomato sauce and salt as desired. Pour sauce mixture into slow cooker. 4. Cover slow cooker and cook on low at least 5 hours, up to 12 hours. 5. Roughly chop a bunch of fresh cilantro or parsley and toss gently into slow cooker. Stir-in frozen peas. 6. Garnish with more cilantro or parsley and serve with basmati rice and garlic naan.

Slow Cooker Cleaning - Strategies for Success
For busy folks on the go, crock pots, also called slow cookers, can be an amazing advancement. They offer the convenience of delicious, hot, and healthy meals, even after a long day of work. While using them is easy -- just add the ingredients, turn on, and then ignore until finished, cleaning the slow cooker's crock can be a challenge.
Here are some strategies to make it easier...
Liner Bags
There are several different brands of slow cooker liner bags available. You simply line the crock with the liner bag, add the ingredients and cook as directed. After the meal is ready, remove the meal from the bag and serve it. In most cases, you'll be able to toss the liner bag, leaving the practically clean crock ready for a quick clean up. You should never leave the food in the bag after cooking or store the food in the bag. While these bags can make clean-up easy, you'll need a bag each time, which can be costly. In addition, the bags may not hold up for longer recipes (in the 8-10 hour range).
Cooking Spray
Cooking spray is one of my favorite kitchen tricks. I use it for a lot of applications. In this case, simply spray the slow cookers crock thoroughly, before you add the ingredients. This will keep the cooked food from sticking to the pot walls. Obviously, you will need to clean the pot, but the sticking should be minimized if not completely eliminated.
Clean Up Immediately
Food fresh out of a crock pot is very hot. You can easily let the food sit for 5 minutes while you start clean up on the pot and it will have no adverse on affect the dinner.
As long as the crock isn't too hot to handle, you should be fine. In the case of a ceramic pot, avoid bringing a very hot pot in contact with a cold surface like a counter top or sink. I run hot soapy water into the pot, using my sink sprayer. I leave the pot sitting in the unplugged crock pot while I eat.
Soaking
More often than not, I wait until I am doing the rest of the dishes to wash my crock pot liner. I fill it with soapy water and leave it soaking on the counter while I do the rest of the dishes. I don't have a dishwasher, so I wash the dishes by hand which take a bit of time. Leaving the crock until the end gives it plenty of time to soak and makes cleanup a breeze.
Machine Washing
Ceramic and stoneware crocks are usually dishwasher safe. Check your instruction manual and if it says it is alright, just whomp that puppy into the dishwasher!
In general, I find that cleanup really is easy. Only occasionally will you find that there is a problem. In any event, the benefits of crock pot cookery far outweigh the disadvantages of clean up.

Italian Crockpot Recipes
With just a little bit of time in the morning for preparation, you can have dinner ready for your entire family right when you walk in the door!
Family Size Cheesy Ravioli
A huge batch of ravioli to be enjoyed by the entire family.
Ingredients:
1 tbsp olive oil
1medium chopped onion
2 cloves minced garlic
2 - 26 oz jars spaghetti sauce
1 - 15 oz can tomato sauce
1 tsp Italian seasoning mix
2 - 25 oz packages frozen ravioli
2 cups shredded mozzarella cheese
Spray inside of crockpot with cooking spray. Cook onion and garlic in oil over medium heat in skillet until onion is tender. Stir in spaghetti sauce, tomato sauce and italian seasoning mix. Place 1 cup of sauce in slow cooker. Add one package of frozen ravioli, top with 1 cup of cheese. Add second package of ravioli and 1 cup cheese. Pour remaining sauce over the top. Cover and cook on low 5-6 hours, until ravioli is tender.
Slow Cooker Pizza
A different way to eat pizza that's popular with the kids!
Ingredients:
1 ½ pounds ground beef
1 medium chopped green pepper
1 medium chopped onion
1 drained 4 oz can mushrooms
1 - 15 oz can tomato sauce
1 - 14 oz can pizza sauce
2 tbsp tomato paste
4 cups rotini pasta noodles
23 ½ oz packages sliced pepperoni
2 cups shredded mozzarella cheese
2 tsp Italian seasoning mix
In a skillet cook ground beef, green pepper, onion and mushrooms over medium heat, drain. Add tomato sauce, pizza sauce, italian seasoning mix and tomato paste, mix well. Meanwhile, cook noodles as directed on package. Spray slow cooker with cooking spray. Layer pasta, tomato beef mixture, pepperoni, and cheese. Cover and cook on low 4 hours, until heated through.
Notes: You can use other types of pasta with this dish, just make sure it's a fairly sturdy noodle like penne, egg noodles, or spiral pasta.
Chicken Alfredo
Chicken and vegetables in a creamy alfredo sauce with quick and easy preparation; what more could you ask for?
Ingredients:
4 boneless skinless chicken breasts
1 - 16 oz jar Alfredo sauce
2 cups frozen corn
2 cups frozen peas
1 diced red pepper
1 drained 4 oz can mushrooms
1 medium chopped onion
½ cup water
2 cloves minced garlic
1 tsp black pepper
3 cups cooked noodles
Spray crockpot with cooking spray. Place chicken in slow cooker. In a large bowl, combine Alfredo sauce, corn, peas, red pepper, mushrooms, onion, water, garlic, and black pepper. Pour over chicken. Cover and cook on low for 6-8 hours, or high for 3-4 hours. Serve with noodles.

This little video shows two portable solar cookers in action: - Cookit: perfect for midday cooking - Funnel cooker: great for AM and PM cooking when the sun is lower in the sky The funnel cooker can achieve higher temperatures but is not as effective from 11-2 PM. The oval pan shown on the cookit also works great on the funnel cooker. The oval pans cook plenty of food in 2-3 hours. A little rack is used to get the pan up in air a few inches, and the bag helps to raise the temps about 25F° or so.

Unsophisticook's Confession: Homemade Chex Mix

Ingredients -3 cups Corn Chex cereal -3 cups Rice Chex cereal -3 cups Wheat Chex cereal -3 cups Cheerios cereal -3 cups pretzel sticks -1 can mixed nuts -1 cup vegetable oil -2 tablespoons Worcestershire sauce -1 1/2 teaspoons seasoned salt -3/4 teaspoon garlic powder Directions 1. Mix all three Chex cereals, Cheerios cereal, pretzel sticks, and mixed nuts in a 6-quart or larger slow cooker. 2. Whisk together vegetable oil, Worcestershire sauce, seasoned salt and garlic powder and pour over cereal mixture. Mix well. 3.Cook uncovered on high for approximately 90 minutes, stirring frequently. 4.Turn the slow cooker down to low and cook for an additional 20 minutes, again stirring frequently. 5.Spread on a cookie sheet to cool.

Bring Out the Slow Cooker and Make a Delicious Beef Bourguignonne or Round Steak With Onions
One of the best ways to cook and keep the kitchen cool on hot days, have a hot meal ready when you get home on cold days, or just prepare a tasty meal on busy days is to use your crockpot or slow cooker. These delicious recipes for Beef Bourguignonne and a Round Steak with Onions will become family favorites and real go-to recipes!
BEEF BOURGUIGNONNE
1 lb boneless beef roast, cut into 3/4-inch cubes
2 tbsp canola oil
1 large onion, chopped
1 garlic clove, minced
1 1/4 cups Burgandy wine
1/2 cup beef broth
1 tsp dried thyme
3/4 tsp dried marjoram
1/2 tsp salt
1/4 tsp black pepper
2 bay leaves
3 cups whole fresh mushrooms
4 medium carrots, cut into 3/4-inch pieces
2 cups frozen small whole onions
3 tbsp quick-cooking tapioca
1/4 cup cold water
2 tbsp all-purpose flour
2 slices bacon, crisp fried, crumbled
3 cups hot buttered noodles
In a large skillet heat the oil until hot. Add the beef cubes, onion, and garlic; cook until the beef is browned and onion is getting tender. Drain.
ROUND STEAK WITH ONION
2 lb beef round steak about 3/4-inch thick
1/4 cup flour
1/2 tsp salt
couple dashes black pepper
2 tbsp canola oil
1 medium to large yellow onion, sliced
1 can (10 3/4-oz) condensed cream of celery soup, undiluted
1/2 tsp dried oregano
1/4 tsp dried thyme
1/3 cup cold water
3 tbsp flour
Trim any excess fat from the round steak and cut steak into 6 equal portions. Coat meat in the 1/4 cup of flour; pound gently with a meat mallet. Sprinkle the meat with the salt and pepper.
Heat canola oil in a large skillet over medium-high heat. Brown the meat, on both sides, in the skillet. Remove meat from the skillet and place in slow cooker or crockpot. Discard the drippings from skillet, reserving about a tablespoonful.
Cook the onion in the reserved drippings in the skillet; stir in the celery soup, oregano, and thyme to blend well. Pour the soup mixture over the meat in the cooker. Place the cover on the cooker and cook on low setting for 8 to 10 hours.
Measure out 1 1/2 cups of the cooking liquid and place into a saucepan. Blend the cold water slowly into the 3 tablespoons of flour; stir into liquid. Cook, stirring, until thickened and bubbly. Season, if needed. Serve over the steak pieces.
In a 4-quart or larger crockpot or slow cooker layer the mushrooms, carrots, and onions. Sprinkle the tapioca over all. Place the meat mixture atop the vegetables and add the thyme, bay leaves, marjoram, salt, and pepper. Combine the Burgandy and the beef broth; pour over the meat.
Place cover on pot and cook on low for 10 to 12 hours or on high for 5 to 6 hours until meat and vegetables are tender. Discard the bay leaves then stir in the crumbled bacon. Serve over the hot buttered noodles.

Please adjust the cook time. * 6 boneless skinless chicken breast halves (4 ounces each) * 3/4 cup thawed lemonade concentrate * 3 tablespoons ketchup * 2 tablespoons brown sugar * 1 tablespoon cider vinegar * 2 tablespoons cornstarch * 2 tablespoons cold water Directions * Place chicken in a 5-qt. slow cooker. In a small bowl, combine the lemonade concentrate, ketchup, brown sugar and vinegar; pour over chicken. Cover and cook on low for 2-1/2 hours or until chicken is tender.(Adjust to 4-5 hours..or perhaps it is supposed to be set on high) * Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; gradually stir into cooking juices. Cover and cook on high for 30 minutes or until thickened. Return chicken to the slow cooker; heat through. Yield: 6 servings.

Boston Baked Beans: Classic, Slow-Cooker Version, or Short Cut Style
No doubt about it, Boston is famous for its fabulous baked beans recipes. Here are three ways to enjoy this classic comfort food.
Classic Boston Baked Beans
The characteristic flavor of Boston beans is created by long, slow baking in a sweet molasses-based sauce richly flavored with bacon or salt pork, and the result is pure baked bean heaven.
Ingredients
- 2 cups navy beans
- 1/2 pound bacon, diced
- 1 onion, diced
- 1/3 cup molasses
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon mustard
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup brown sugar
Soak beans overnight in cold water. The next day, drain soaking water and cover beans with fresh water. Bring to a boil and simmer for 30 minutes. Drain and reserve the liquid. Combine beans with bacon and onion in a large oven-safe pot. In a separate bowl combine molasses, salt, pepper, mustard, ketchup, brown sugar, and Worcestershire sauce with one cup of the reserved liquid; stir to mix thoroughly, then add to beans and mix well.
Cover pot (use aluminum foil if pot has no lid) and bake at 300 degrees for 3 hours, checking occasionally and adding from the remaining reserved liquid as necessary to keep the mixture from drying out. When the mixture has baked for three hours, remove from oven and stir well, adding from the reserved liquid as necessary. Re-cover the pot and return to the oven to bake for another hour, then remove lid or foil and bake uncovered for 30 minutes.
Boston Baked Beans - Crockpot Version
Baked beans are a natural for crockpot cooking. Just put the beans to soak before you go to bed, drain and add them to the crockpot in the morning, and come home to a delicious meal!
Ingredients:
- 2 pounds Navy or Great Northern beans
- 1 medium onion, chopped
- 6 strips of bacon, cooked crisp and crumbled
- 1 teaspoon mustard
- 1/2 teaspoons ground cloves
- 1 cup molasses
- 1/2 cup dark brown sugar, packed
- 1 teaspoon salt
Soak beans overnight. In the morning, drain beans and set aside. Mix all remaining ingredients together and pour into slow cooker, then add beans and enough water to cover. Stir well. Set cooker to low and cook for 10-12 hours.
Super Short Cut Boston Baked Beans
If you crave that classic baked bean taste but don't have time for hours of baking or crockpot cooking, try this shortcut version. You'll be enjoying this dish in under an hour!
Ingredients:
- 1 large onion, sliced thin
- 3 slices bacon, finely chopped
- 1 teaspoon onion powder
- 2 large (28 oz) cans of Pork and Beans
- 1 tablespoon molasses or maple syrup
- 1 cup ketchup
- 1 teaspoon mustard
- 1/3 cup of prepared BBQ sauce
Saute the bacon and onion together in a frying pan until the bacon is crispy and the onion is softened. In large dutch oven or baking dish, combine molasses, ketchup, mustard, BBQ sauce, and onion powder. Add bacon, onions, and beans and stir. Bake uncovered at 350 degrees for 30 minutes.
BBQ Baked Beans (Slow-Cooker) - My Way

Low Fat Slow Cooker - Tips for Cooking With Less Fat
Good utensils for cooking with less fat:
* A frying pan coated with an anti-adhesive which makes it possible to cook with little or not fat content.
* A grill, essential to cook grilled and to allow you to get rid of the fats present in the aliments you are cooking.
* A pressure-cooker which allows all cooking, with water and vapor, in a minimum amount of time. Cooking is three times faster and requires half less liquid or fats.
* Aluminum foil and greaseproof paper which will be used for roll the preparations in curlpaper.
* A brush, which makes it possible to use a minimum of fatty substance to coat the meats and fish to be roasted.
* And possibly an ideal microwave oven to cook without fat content or to heat the dishes prepared in advance.
Easy ways to cook with less fat:
o Do not hesitate to use the maizena. When cooked, it thickens and makes hot sauces more consistent without you having to add fat content. For example, for pastas, use skimmed milk with a little maizena to thicken the sauce.
o Rather than to add some drops of oil to a dish which threatens to stick, rather pour a half glass of water or vegetable soup.
o Replace the fresh cream in the desserts by reduced ricotta and a little yoghurt mixed with vanilla.
o When peeled and cooked with water, the potatoes lose from 30 to 40% of their vitamins. They will lose less than 10% if you make them cook with their skins.
o For a soft sour sauce: mix honey, orange juice, mustard and some olive oil.
o You can do an omelet as follows: Cook a whole egg and 2 white eggs and some skimmed milk together with herbs in an anti-adhesive pan. Of course, you shouldn't add any fatty substance.
o You can make your own mayonnaise by: beating some hard egg yolks mixed with some white cheese, mustard, pepper and some salt.
Do try to integrate these tips and tricks when cooking and you will be cooking with less fat.

INGREDIENTS 6 Italian sausage links (about 1 1/2 lb), cut into 1-inch pieces 1 cup finely chopped onions (2 medium) 3 tablespoons sugar 1 teaspoon dried basil leaves 1 teaspoon dried oregano leaves 1/2 teaspoon salt 2 cloves garlic, minced 1 can (28 oz) diced tomatoes, undrained 2 cans (8 oz) tomato sauce 2 cans (6 oz) tomato paste 24 oz uncooked spaghetti DIRECTIONS In 3 1/2- to 4-quart slow cooker, mix all ingredients except spaghetti. Cover; cook on Low heat setting 6 to 8 hours. About 30 minutes before serving, cook spaghetti as directed on package. Drain. If desired, skim and discard fat from sauce. Serve sauce over spaghetti.
